Fudge Brownies

1 cup sugar

5 tablespoons butter

1/3 cup milk

2/3 cup pastry flour

1 cup chopped nuts, if desired

2 eggs

4 tablespoons cocoa

1/8 teaspoon salt

1 teaspoon vanilla extract

1.  Beat the butter and sugar until light and creamy.

2.  Add the eggs, lightly beaten.

3.  Next, add the milk.

4.  Sift together the flour, salt, and cocoa.  Add to the above mixture.

5.  Stir in nuts and vanilla.

Spread 1/4 inch thick in greased, shallow pan.  Bake at 350 degrees for 15 minutes or until done.  While still warm, cut into squares like fudge.

Old Fashioned Chocolate Fudge Candy

2 cups sugar

2/3 cup milk

2 tablespoons corn syrup

2 tablespoons butter

3 ounces unsweetened chocolate, broken into small pieces

1 teaspoon vanilla

1.  Put sugar, milk, syrup, and chocolate in a saucepan.

2.  Stir until sugar is dissolved.

3.  Cook slowly until the temperature reaches 236 degrees or until the mixture forms a soft ball when a little is dropped into cold water.

4.  Remove from heat.

5.  Add butter.

6.  When cooled to lukewarm, add vanilla.  Beat until thick.

7.  Pour into a shallow greased pan.  Chill.  Cut into squares when firm.

Blueberry Slump

1 quart blueberries
3 cups water
2 cups sugar
1 1/2 cups flour
1 1/2 teaspoons baking powder
1/4 teaspoon salt
Milk

1.  Boil the berries, water, and sugar in saucepan till there is plenty of juice.
2.  Mix flour, baking, and salt together and add sufficient milk to make a soft dough.
3.  Pour over the berries.
4.  Cover and cook for 15 minutes on top of stove.

Serves 6

Escalloped Raisins and Apples

1 cup raisins
1/4 cup brown sugar
1/4 teaspoon salt
1/4 cup water
1 teaspoon butter
1 quart apples, pared and quartered
1/4 cup bread or cracker crumbs

1.  Butter a baking dish.  Put in half of the raisins, cover with half of the apples.  Dust with salt.
2.  Add the balance of raisins, then apples.  Sprinkle with a little salt.
3.  Cover with the brown sugar and water.
4.  Sprinkle crumbs over the top and cover.

Bake at 350 degrees for 30 minutes.  Remove cover and bake 15 minutes or until brown.  This is best served cold.

Sweet Potato Nut Loaf

3 cups mashed sweet potatoes
1 cup chopped nut meats, any kind
1 small egg, well beaten
1/4 cup butter or margarine
3/4 cup dry bread crumbs
1 teaspoon salt
1/4 teaspoon pepper

1.  Mash potatoes while hot.
2.  Add to them 2/3 of nut meats, butter, salt, pepper, half of crumbs, and beaten egg.
3.  Thoroughly grease baking dish and sprinkle it thickly with remaining bread crumbs and nuts mixed together.
4.  Turn in potato mixture, packing closely into pan.
5.  Cover top with remaining bread crumbs and nuts.

Bake for 30 minutes at 350 to 375 degrees.

Beef Casserole

3 cups minced cold, fully-cooked beef
(could be leftover roast or steak)
1 onion
1 1/2 cups canned tomatoes
2 tablespoons flour
2/3 cup gravy, stock, or water
1 teaspoon sugar
2/3 teaspoon salt
1/4 teaspoon pepper
1 1/2 cups any flaked cereal
2 tablespoons butter or drippings

Pass the meat and onion together through the food chopper or mince finely in a chopping bowl.  Add to them the flour, sugar, salt, and pepper.  Place in a saucepan with the tomatoes and gravy or water, and bring to boiling point, stirring while heating.

Grease a baking dish and sprinkle the bottom of it with 1/2 of the flaked cereal, then pour in the meat mixture, cover with the remaining flakes, dot with butter or drippings.

Bake 30 minutes at 350 degrees.

If desired, 1/3 cup of grated cheese may be mixed with the top flakes, or instead of dotting the top with butter or drippings, these may be melted in a pan and the flakes stirred into them.  In this way, the butter will be more evenly distributed.

Plain Confectioner’s Frosting

3 tablespoons boiling water

1 teaspoon any desired flavoring

About 1 2/3 cups confectioner’s sugar

Sift sugar and add to boiling water until of a consistency which will spread easily.  Add extract before spreading on cake.

Chocolate Frosting

Use recipe above and add 2 tablespoons powdered cocoa or one square melted chocolate.

Coffee Frosting

Substitute 2 tablespoons of very strong coffee and 1 tablespoon evaporated milk for the water in the above recipe.

Coconut Frosting

To the plain frosting recipe, add 2/3 cup grated or shredded coconut, beating it in after frosting is made.
