Peach Crisp Pudding

1/4 cup butter
1/2 cup sugar
4 cups bread crumbs
2 cups diced peaches and juice
1 tablespoon lemon juice

Cream butter and sugar together.  Add bread crumbs to sugar mixture and blend well.  Mix fruit and lemon juice with the bread. Pour into greased individual baking dishes and bake at 375 for 35 minutes.  Garnish with peaches and whipped cream if desired.  Serve warm.

Ham and Potato Casserole

1 cup chopped, cooked ham
2 1/2 cups freshly mashed potatoes
1 tablespoon shortening
1/2 cup bread crumbs
1 teaspoon each minced parsley and onion
1/2 teaspoon mustard
1/2 cup hot milk

Mash the potatoes with the shortening and milk until light and smooth.  Add ham and seasonings.  Grease baking dish, sprinkle in part of the crumbs.  Put in ham and potatoes, sprinkle top with the rest of the crumbs.  Bake until top is well-browned.

Mashed sweet potatoes are preferred by some for this dish, in which case the mustard and onion may be omitted and a teaspoon of sugar added.

Baked Tomatoes and Macaroni

Tomatoes
1/2 package of macaroni
2 tablespoons grated cheese
1/2 cup white sauce
1 tablespoon minced green pepper
1 tablespoon minced onion
Salt, pepper

Cut off top of tomatoes and scoop out some of the pulp.  In each tomato, put a teaspoon of butter and set in oven to heat through but not soft enough to lose shape.

Cook macaroni in salted water for 15-20 minutes.  Put tomatoes in center of a baking dish, drain macaroni and arrange around tomatoes.  Fill tomato centers with some of the macaroni cut in small pieces.

Heat the white sauce, add the onion and green pepper, turn over the macaroni, and sprinkle with the grated cheese.  Set in oven until very hot and cheese is slightly browned.

Old Fashioned Doughnuts

1/2 cup butter
2 cups sugar
3 eggs
1 1/2 cups milk
Nutmeg or cinnamon
3 rounded teaspoons baking powder
5 cups flour

Cream together the butter and sugar.  Beat the eggs very light and add, with the milk, to the creamed butter and sugar, then add nutmeg or cinnamon.

Sift the baking powder with the flour three times, and add to the above mixture, mixing thoroughly.  Keep the dough as soft as possible, just so it can be handled.  Roll out 1/4 inch thick.  Cut in rounds, and fry in deep, hot fat.

Turn them as soon as they rise, and often till brown.  Cool and then sprinkle with powdered sugar.

Crullers – New England Fried Cakes

1 cup sugar
2 eggs
1 teaspoon salt
Dash of nutmeg or cinnamon
2 tablespoons melted shortening
1 cup milk
5 to 5 1/2 cups sifted flour
4 level teaspoons baking powder

Mix sugar, eggs, salt, nutmeg, and shortening together; add the milk, then the flour with which the baking powder has been thoroughly sifted and mix all well.  Keep the dough as soft as possible.

Place a portion on a floured board and knead lightly until it can be rolled without sticking.  Roll out half an inch thick.  Cut in circles and fry immediately in deep, hot fat, till golden brown, turning the cakes as soon as they rise.

Drain on paper towels.  When cool, dust with powdered sugar.

Note:  A cookie cutter can be used to cut the circle shapes.
