Blarney Stone Cookies

2 cups rolled oats
1/2 cup coconut
2 eggs
2 teaspoons baking powder
1 cup sugar
2 tablespoons melted butter or margarine
1/2 teaspoon lemon extract
Tiny pinch salt

Mix all together, adding well-beaten eggs last. Drop by teaspoonfuls on greased baking sheet and bake for 10 to 15 minutes in hot oven (400 degrees).

Do not try to remove from sheet till cool. A bit of candied fruit may be put on each just before baking.

Fruit Cookies for Christmas

1/2 cup shortening
1/2 cup butter
1 cup sugar
2 beaten eggs
1/2 cup milk
2 cups flour
1/4 teaspoon soda
3/4 cup currants
3/4 cup raisins
2 cups uncooked rolled oats

Cream the butter and shortening.  Add the sugar, eggs, milk, flour, soda, currants, raisins, and rolled oats.  Mix thoroughly, drop a teaspoonful at a time on unbuttered baking sheet.  Bake in a slow oven (about 300 degrees) till done.

Blueberry Squares

2 cups flour
4 teaspoons baking powder
1/4 teaspoon salt
5 tablespoons shortening, melted
2/3 cup milk
1 1/2 cups berries
1/2 cup granulated sugar
1/2 teaspoon cinnamon

Mix together the flour, baking powder, and salt.  Add shortening and milk.  Mix lightly and pour into a buttered pan.  Press down until soft dough is about 2/3 inch thick.  Immediately spread with other ingredients mixed together.

Bake at 375 degrees for 12 minutes.  Cut in squares and serve with butter, if desired.

Brown Sugar Cookies

7 cups sifted flour
1 tablespoon soda
1 tablespoon cream of tartar
4 cups brown sugar
1 cup melted butter
4 eggs

Mix ingredients well and form into a roll.  Let stand in refrigerator for at least 20 minutes.  Slice and bake at 400 degrees for 8 to 10 minutes, or until lightly browned.

Peanut Butter Molasses Cookies

1 cup brown sugar
1 cup butter or shortening
1 teaspoon soda
1 teaspoon baking powder
2 tablespoons peanut butter
1 cup molasses
1 cup milk
2 eggs, beaten
1 tablespoon ginger
Flour tomake a soft dough

Cream butter and peanut butter.  Add sugar and beat well.  Stir in molasses, milk, and beaten eggs.  Sift together the dry ingredients and stir into the mixture.  Just enough flour should be used to make a dough stiff enough to roll out, or rather pat out to the diesired thickness on a well-floured board.  Bake at 350 degrees for about 10 minutes or until slightly firm.  These burn very easily.

Chocolate Jumbles

1 cup granulated sugar

10 tablespoons butter

2 ounces unsweetened chocolate

2 eggs, beaten

2 1/4 cups sifted flour

2 1/2 teaspoons baking powder

Cream butter and add sugar gradually; melt chocolate and add, mixing thoroughly.  Put in beaten eggs and when well mixed, add the flour sifted with baking powder.  Refrigerate to chill, then roll out to a half-inch thickness.  Cut into rounds with a cookie cutter and with a smaller cutter, cut out centers.  Bake at 350 degrees for 10 to 12 minutes or until done.

1 cup granulated sugar

2 1/4 cups flour

3 ounces unsweetened chocolate

1 beaten egg

2 1/2 teaspoons baking powder

1/4 cup milk or cold water

1/2 teaspoon salt

Cream butter and add sugar gradually, beating to a cream.  Add beaten egg and then the chocolate, melted, and mix thoroughly.  Sift flour with baking powder and salt, then add with milk.  when well mixed, chill and roll out on floured board and cut into rounds with cookie cutter.  Bake at 350 for 10 to 12 minutes or until done.

Molasses Cookies

1/2 cup molasses

1/3 cup brown sugar

1/4 cup butter or shortening

1/3 cup milk

1/2 teaspoon soda

1/2 cup raisins

1 egg

2 cups flour

1/2 teaspoon salt

1 teaspoon mixed ground spices – cloves, nutmeg, cinnamon, ginger

Put molasses, sugar, and melted shortening into a bowl, add milk and egg, lightly beaten.  Sift and add all dry ingredients.  Drop by spoonfuls on a greased cookie sheet, having cookies 2 or 3 inches apart.  Put a raisin on top of each cookie.  Bake at 350 degrees for 10 to 12 minutes.
