Macaroni and Olive Salad

1 cup sliced boiled macaroni
1 cup chopped celery
3/4 cup chopped stuffed olives
1 tablespoon chopped onion
1 tablespoon chopped parsley
1/2 cup mayonnaise

Mix thoroughly.  Chill.  Serves 6.

Fritter Facts

Fritters are served as a vegetable or a sweet, for a lunch, dinner, or supper, according to the ingredients used in making them.  Whether sweet or plain, the foundation batter is much the same.

A fritter batter which is to be used as a medium for whole or sliced fruit should be quite thin, as it is to serve as a cover for the fruit.  When chopped fruits or vegetables are stirred in, or the batter is to be used plain, it should be thick enough to retain its shape when dropped by spoonfuls into the frying kettle.

The fat should be deep enough to cover the fritters, and it should be smoking hot when used.  Each fritter will at first sink to the bottom of the kettle; then, as the heat starts the baking powder into action and the dough begins to swell, it will rise to the surface, and should be gently turned, the turning to be repeated, until the fritter is finely colored.

Most fritters are done within 5 minutes, the time needed to cook them being determined by one which should be cooked as a tester.

Tomato Pasta Salad

2 cups cooked macaroni, or your favorite pasta
1 green pepper, chopped
1 small onion, chopped
1 – 2 tomatoes, cut in small chunks
Mayonnaise
Salt to taste
(I also lik to add a little sugar – maybe a teaspoonful – to taste.)

Mix all ingredients.  Serve cold in a nest of lettuce.

Baked Spaghetti

1/2 pound spaghetti
2 tablespoons butter or oil
1 1/2 tablespoons chopped onion
1 1/2 tablespoons chopped green pepper
2 cups canned or stewed tomatoes
1 teaspoon salt
1/4 teaspoon pepper
1/8 teaspoon paprika
1 tablespoon sugar
1 cup grated cheese

1.  Boil spaghetti in salted water until tender.  Drain.
2.  Melt butter in pan and saute onion and green pepper until soft.
3.  Add tomatoes, salt, pepper, paprika, and sugar.
4.  Simmer 10 minutes.
5.  Add spaghetti and mix well.
6.  Add 1/2 cup cheese.
7.  Turn into greased baking dish.
8.  Sprinkle with remaining cheese.
9.  Bake at 400 degrees until cheese is brown, 20 – 25 minutes.

Variation:
Fully-cooked ground sausage, beef, or ham can also be added.
