Potato Puffs

Ingredients

  • 2 1/2 cups hot mashed potatoes
  • 2 1/2 tablespoons butter
  • 1/2 teaspoon baking powder
  • Salt and pepper
  • 1/2 cup hot cream or milk
  • Whites of 2 eggs

Directions

  • Mix all ingredients, except eggs.
  • Beat thoroughly.
  • Add the whites of the 2 eggs beaten until stiff.
  • Pile lightly in a buttered baking dish and bake at 350 degrees until well puffed and browned.

Macaroni with Homemade Tomato Sauce

Macaroni

Cook one cup macaroni in boiling salted water for 20 minutes. Drain, and pour over cold water to separate pieces. Mix with 1 1/2 cups Tomato Sauce (below). Add 1/2 cup grated cheese. Turn into a buttered baking dish, cover with buttered crumbs. Bake 20 minutes at 400 degrees.

Homemade Tomato Sauce

1/2 can crushed tomatoes
1/8 teaspoon soda
1 teaspoon sugar
6 peppercorns
2 cloves
Slice onion
Bit of bay leaf
1/2 teaspoon salt
Few grains cayenne
4 tablespoons butter
3 tablespoons flour
1 cup beef stock

Heat tomatoes to the boiling point. Add soda and the seven ingredients following. Cook for 20 minutes. Add stock.

Brown butter in a sauce pan, add flour and continue browning, stirring constantly. Add hot tomato mixture slowly, mix well, and pour over macaroni.

Homemade Noodles

1 egg
1/2 teaspoon salt
Flour
Few grains nutmeg

Beat egg slightly. Add seasonings, add enough flour to make a stiff dough. Knead on a floured board until smooth and elastic. Roll out on a sheet as thin as paper, cover and let stand for 30 minutes.

Roll loosely and cut the desired width, either in threads or ribbons, unroll and scatter over the board. Let lay for 30 minutes.

Cook in boiling, salted water 15 minutes. Drain.

Risotto

Many people are not aware of this rice that is brown in color with a rich, nutty flavor that makes it especially desirable for main dishes at dinner or supper. Here is a good way to cook it by following this Italian recipe:

1. Melt in a saucepan 2 tablespoonfuls of sausage or bacon fat; lightly brown in the fat half of a small onion, sliced, and a cupful of uncooked rice.

2. Add 1 1/2 cups cooked tomatoes, 2 cups soup stock or water, 1 1/2 teaspoons salt, and a dash of pepper.

3. Cook until the rice is tender and has absorbed all the liquid.

4. Now pick out the onion rings and stir in 1/2 cup of grated cheese.

5. Leave the dish over hot water for about 15 minutes, stirring occasionally to melt the cheese.

Serve while hot.

Christmas Turkey Stuffing

At Christmas time the homemaker is anxious to introduce some new touch to the holiday feast. It wouldn’t seem quite like Christmas without the turkey; but a well-cooked bird, with a new stuffing, will appeal to all.

The secret of a perfect stuffing is to regulate the moisture to such a degree that there is no excess, yet the whole is not dry. Sweet Potato Croquettes

2 cups hot riced sweet potatoes

3 tablespoons butter

1/2 teaspoon salt

Few grains pepper

1/2 cup chopped walnut meats

1 egg well beaten

Mix ingredients in the order given.  If mixture is too dry, add hot milk.  Mold into cork-shaped croquettes, roll in crumbs, then in egg, again in crumbs, and fry in deep hot shortening.  Drain on paper towels.

Baked Tomatoes and Macaroni

Tomatoes
1/2 package of macaroni
2 tablespoons grated cheese
1/2 cup white sauce
1 tablespoon minced green pepper
1 tablespoon minced onion
Salt, pepper

Cut off top of tomatoes and scoop out some of the pulp.  In each tomato, put a teaspoon of butter and set in oven to heat through but not soft enough to lose shape.

Cook macaroni in salted water for 15-20 minutes.  Put tomatoes in center of a baking dish, drain macaroni and arrange around tomatoes.  Fill tomato centers with some of the macaroni cut in small pieces.

Heat the white sauce, add the onion and green pepper, turn over the macaroni, and sprinkle with the grated cheese.  Set in oven until very hot and cheese is slightly browned.

Sweet Potato Nut Loaf

3 cups mashed sweet potatoes
1 cup chopped nut meats, any kind
1 small egg, well beaten
1/4 cup butter or margarine
3/4 cup dry bread crumbs
1 teaspoon salt
1/4 teaspoon pepper

1.  Mash potatoes while hot.
2.  Add to them 2/3 of nut meats, butter, salt, pepper, half of crumbs, and beaten egg.
3.  Thoroughly grease baking dish and sprinkle it thickly with remaining bread crumbs and nuts mixed together.
4.  Turn in potato mixture, packing closely into pan.
5.  Cover top with remaining bread crumbs and nuts.

Bake for 30 minutes at 350 to 375 degrees.

Tomato Rice Recipe

2 1/2 cups cold cooked rice

1 1/2 cups grated cheese

1/3 teaspoon paprika

1/2 teaspoon salt

1 1/2 cups stewed, sifted tomatoes

Grease a baking dish.  Place in it alternate layers of rice and grated cheese, reserving 2 tablespoons of cheese.  Add salt and paprika to stewed, sifted tomatoes, pour these over rice and cheese, sprinkle remaining cheese over top.  Bake at 350 degrees for 30 minutes.
