Potato Recipes
Here are two old time potato recipes for stuffed potatoes and potato balls.Stuffed Potatoes
Wash 6 medium-sized, smooth potatoes. Bake, and cut off a lengthwise slice from each. Scoop out potato with a spoon, using care that the shells are not broken.
Mix what you scooped out with 2 tablespoons butter, season with salt and pepper, and 1/2 cup hot milk or cream. Add 2 egg yolks, well-beaten, then fold in the stiffly-beaten whites.
Refill shells with this mixture, using a pastry bag or spoon. (Do not spread smoothly.)
Bake at 350 degrees until potatoes are well puffed and browned.
Potato Balls
5 potatoes, cooked and mashed
1/4 teaspoon celery salt
1 teaspoon finely chopped parsley or chives
Salt and pepper to taste
3 tablespoons butter
Hot milk, enough to make consistency to handle
Mix all ingredients together. Shape into smooth, round balls. Roll in flour, egg, and crumbs. Fry to golden brown in deep, hot oil or shortening.
