Sweet Potato Recipes

Here are 3 sweet potato recipes for glazed sweet potatoes, sweet potato balls, sweet potato croquettes.

Glazed Sweet Potatoes

Wash and pare six medium-sized  sweet potatoes.  Cook 15 minutes in boiling water.  Drain and put in a buttered pan.  Make a syrup by boiling these ingredients for 3 minutes:
1/2 cup sugar
1/4 cup water
1 tablespoon butter

Brush the potatoes with syrup and bake 15 minutes; basting twice with the remaining syrup.

Note:  The recipe does not give an oven temperature, but I would estimate about 350 degrees.

Sweet Potato Balls

2 cups riced sweet potatoes
3 tablespoons butter
1 beaten egg
Salt and pepper to taste

Mix ingredients well.  Form in balls, roll in flour, and fry in deep fat.  Drain on unglazed paper.  If too stiff, a little milk may be added to the mixture.

Sweet Potato Croquettes

Follow the recipe for potato balls, and dip the balls in slightly beaten egg to which has been added 1 tablespoon water for every egg.  Roll in sifted bread crumbs.  Fry in deep fat, drain and serve hot.
